Fallen paladins..
Assuming a paladin does fall, how is that dealt with here? Simply shifting evil and classing into BG, or remaking the character a fighter or something?

Falling out of LG alignment is extremely lax here (and indeed is to be expected even depending on what types of monsters you fight. Kill enough evil beholders, and you'll still be chaotic good in no time flat).
That leaves it up to us players on how to handle it... You could roleplay the fall, you could use the cosmic balance in mountainholm to put your alignment back to lawful good (suggest only doing that when you are ready to level up due to the constant alignment shifts here, the cosmic balance costs money and XP to use), take on a self-imposed quest of redemption by hunting down bandits (which will give lawful shifts) or simular NPCs, roleplay out the situation as you see fit

Paladin levels are retained, and if your character meets Alignment requirements, your deity isn't changed once you put levels into BG. However, drastically changing your alignment can result in a change of deity.
There are some issues with how Turning (Rebuking) works after the change (already bugged).

You would keep your paladin class levels when becoming a blackguard. As soon as you level up in blackguard, your deity changes (to Ragnor if you are CE, or Sorgath, aka Mr. Corruption, if you are LE or NE). The change is a 1-time thing when you take that 1st level in blackguard...the only time your patron deity will ever change in this game world.
