So, if you like Bacon, Egg, and Cheese sandwiches like me.... but sometimes
you dont feel like getting out the frying pan, or driving to a local
restaurant or diner to pay for them, here is a quick little
procedure I have been testing and tweaking recently to
make these lovely sandwiches a little more convenient.

I prefer scrambled eggs, and for the purposes of this, they
work best.

Get your eggs into a small microwave safe bowl, maybe
a cereal bowl, and beat/scramble em up. Then season them
how you like (salt, pepper etc). Next I added a few tablespoons
worth of bacon bits (I used Bacos artificial bits, and even thought
I usually dont get thrilled by them, they worked well here).

Take the bowl with the eggs, pop it in the microwave uncovered
for about 1 min per egg you used. When you see the eggs
fluffing up, it should be near the end of the timer.

Take the bowl out (watch its hot), and flip the eggs over in the
bowl. Pop em back in the microwave for another 20-30 seconds.

Get your toast or english muffin, butter em up. Get yer eggs
on there, add your cheese and either give the finished sandies
10-15 secs in the micro, or let em sit fer a minute to melt the cheese.

Enjoy Smile

I was amazed at how good they tasted with the bacos mixed in before cooking in the microwave... It was super easy, and tasty Smile
