The short of it is this: AC Dodge is the only AC that stacks. All other types take highest number. So, Chain Mail +5 and bracers +8... you get the +8 and the +5 on your armor is worthless. There, saved you a lot of reading.

There are also some oddball "untyped" AC bonuses as well that stack with everything, like Dragon Disciple AC, Monk level-based AC, Pale Master AC - they are almost always gained from feats or class features, however. This just in addition to your summary.
