... do they work on bows? Or do you have to use them on a quiver (which would be kinda weird)?

No, and no.

Crystals of smiting work on worn items (in which case they give you some minor damage reduction), or on melee weapons (excluding the mage staff type weapons, and the CEP base item weapons), in which case the item will get it's crit range increased.
